Blueberry Scones

A friend of mine gave me this recipe. I have never made scones before because I always assumed they were a pain in the butt to make, but these were so easy! I am always looking for easy recipes these days since it is next to impossible to spend longer than a couple hours in the kitchen cooking without having to stop to feed or tend to the baby. This recipe is definitely busy-mom friendly!

Blueberry Scones
1 cup blueberry yogurt
2 tsp baking soda
4 cups flour
1 cup sugar
2 tsp baking powder
1/2 tsp lemon juice
1 tsp salt
1 cup butter, softened or melted
1 egg
1 1/2 cups fresh blueberries

1. In a small bowl, blend the yogurt and baking soda, set aside.
2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease 2 large baking sheet.
3. In a large bowl, mix the flour, sugar, baking powder, lemon juice, and salt. Mix in the butter. Stir the yogurt mixture and egg into the flour mixture until just moistened. Stir in the blueberries.
4. Turn dough out onto a light floured surface, and knead bread briefly. Roll or pat into two, 3/4 inch thick rounds. Cut each into 12 wedges, and place them 2 inches apart on the prepared baking sheet.
5. Bake 12-15 minutes in the preheated oven. until golden brown.
